Patyud (also known as Patod in some regions) is a traditional Garhwali dish made from fresh colocasia (arbi) leaves coated with a flavorful paste of rice flour, gram flour, and aromatic spices. The leaves are carefully rolled, steamed until tender, and then sliced into rounds before being lightly fried or tempered with mustard seeds and local seasonings. Soft on the inside with a mildly crisp exterior, Patyud is known for its unique texture and earthy flavor.
